Funfetti Cupcake Recipe

Today's post is a little different as its all about baking.
I bake pretty much every weekend as I find it such a good way to unwind, forget about work and start the weekend properly.
Today's recipe is how to make funfetti cupcakes with three tone icing. They are SO easy to make but taste delicious.

For the Cupcakes
125g Caster Sugar
125g Self Raising Flour
2 Large Free Range Eggs
125g Unsalted Butter
1/4 teaspoon of Bicarbonate of Soda
1 1/2 tablespoons of milk
1/4 teaspoon of Vanilla Extract
Brightly Coloured Sprinkles

For the Icing
500g Icing Sugar (sifted)
250g Unsalted Butter (room temperature)
Vanilla Extract (however much you like)
A Few Colour Pastes (I used purple, pink and Ivory)
Piping Bag & Nozzle

To Make the Cupcakes
Pre heat your oven to 170 degrees Celsius.
Cream together the butter and sugar until its smooth and creamy.
Add all the dry ingredients (Flour & Bicarbonate of Soda) and mix until smooth.
Then add your eggs, milk and vanilla extract. Mix thoroughly and then mix your sprinkles in.
Line your muffin tray with cupcake cases and one by one put the cake batter into the cases, filling them about halfway.
Put them in the oven for about 20 minutes. To know they're cooked, insert a toothpick into the middle of one and if it comes out clean, they're done.
Leave to cool.

To Make the Icing
Mix the icing sugar and butter together until its creamy and soft. (It takes a while so just give it time!) Add some milk if you think its needed (a little bit at a time) and add the vanilla extract as well. Mix it well until its light and soft.
If you want to make the icing colorful separate the icing into bowls (I had 3 colours so put it in 3 different bowls.) Mix in your colour pastes.
When you cakes are cool enough, put the icing in the piping bag. If you have colour icing, use a flat palette knife to layer the colours on top of each other and then get piping! I used the Wilton 1M tip on these cupcakes.

I will definitely be baking these again soon, they're SO tasty!!
